I can’t believe it’s November already. Christmas will be here before we know it so I’ve started my Christmas baking.
First up are these beautiful little Gingerbread Cupcakes. I love gingerbread so I just had to make these. I must say they are very rich and decadent but so delicious. I topped mine with some Buttercream Frosting along with some edible pearls and gold lustre dust/glitter.
I think these would look lovely on any Christmas table but you could eat them anytime of the year.
Preheat the oven to 180 Degrees Celsius (350F) or Gas 4
Cream together the butter, sugar and golden syrup until light and fluffly.
Gradually add the eggs, mixing well in between each addition.
Sift together the flour, baking powder, spices and salt.
Add the dry ingredients to the wet mixture along with milk until thoroughly combined.
Divide the mixture evenly into 12 cupcake cases and bake for 20 minutes or until the spring back when lightly touched.
Leave to cool and then decorate with buttercream frosting. For some extra ginger flavour you can add a teaspoon of ground ginger to the mixture.
I’m still in Halloween mode and trying out some cupcakes designs. These little pumpkins were pretty easy to make like my Easy Pumpkin Cupcakes but with a little more pizazz.
What you will need: Vanilla cupcakes tinted orange – you can use any packet mix or make a Butter Cake
Buttercream Frosting– tinted orange
Orange Sanding Sugar (My Cupcake Addiction has a great how to video. So easy to make Sanding Sugar)
Pretzel Sticks and Spearmint Leaf lollies
Spread your buttercream in a mound over your cupcake
Dip it in your sanding sugar and roll around until completely covered
Using a palette knife score some lines around your cupcake
Cut your pretzel into thirds and push into the centre. Place a leaf into the centre as well and you’re done.
Note: if you can’t get hold of spearmint leaves you could make some fondant leaves

What you will need: Vanilla cupcakes tinted orange – you can use any packet mix or make a butter cake 1 quantity of Buttercream Frosting– tinted orange 1 x Wilton Black Gel Tube When your cakes have cooled spread over some frosting evenly over the cakes. Then, pipe on your spiderweb design and you’re done.
